The kitchen takes center stage in the open, stylish and contemporary dining room, done in cobalt blues, yellows and oranges. A pattern of golden mosaic stars, sun and moon adorns the blue tile floors and china. Chefs use the freshest seasonal and local products to get creative with dishes such as Thai rubbed mahi-mahi served with brown sugar and bacon-sautéed dandelion greens, saffron risotto and roasted garlic chipotle butter sauce. Or try the yellow-fin tuna seared rare and served with a spicy scallion waffle, toasted sesame maple syrup and chilled seaweed salad. For the ultimate experience, reserve a premier table well in advance – seven courses of food and wine served on the rooftop at $150 a person. The Galaxy's full-scale bar and wine list has won the Wine Spectator’s Award of Excellence. Though upscale, the restaurant is considered smart-casual. Diners can wear anything from shorts to tuxedos.
